At Hairiti Coffee, we are proud to be part of Al Roofoof Hotel Supplies & Trading Company’s ambitious initiative to cultivate authentic Arabica coffee in Oman. Using traditional Yemeni varieties such as Dawa’iri and Adaini, we have successfully introduced coffee farming to the fertile peaks of the Dhofar mountains.

This project combines innovation with heritage, bringing back the legacy of Arabica coffee to its historical roots in the Arabian Peninsula — while ensuring a sustainable and thriving future for Omani coffee.

Nursery & Plant Production

At Hairiti Coffee, our journey begins in the nursery, the very heart of our farm’s future. Here, each new coffee plantlet is carefully nurtured from its earliest days. Seeds are germinated and transferred into seeding bags, where they can develop strong, healthy roots in a protected environment. This stage is vital, as it lays the foundation for the resilience and productivity of every tree.

The warm, humid climate of Salalah — enriched by the seasonal monsoon rains — creates an ideal setting for young plants to thrive. Under the care of our dedicated team, every seedling is given the right balance of water, shade, and nutrients. We monitor them closely, ensuring they grow sturdy and ready for the challenges of the open fields.

Once strong enough, these young coffee plants are transplanted to our hillsides, where they continue their growth journey under the Omani sun. From these carefully raised beginnings, they flourish into robust coffee trees, capable of producing the premium beans that define Hairiti Coffee.

This thoughtful approach reflects more than just farming — it is our commitment to sustainability, quality, and preserving the natural richness of Salalah’s landscape. Each plantlet represents the future of our farm, and with it, the promise of many harvests to come.

The First Signs of Coffee Cherries

In the early stages of growth, the coffee tree is a picture of vitality, its branches covered with lush green leaves that soak up the gentle Salalah sun. Nestled among this greenery are the very first signs of life — tiny, pale-green buds that will gradually develop into coffee cherries. Though small and delicate, these buds carry within them the promise of the harvests to come.

At Hairiti Coffee, we see this stage as one of the most crucial. Each young cherry is carefully nurtured with patience and care, receiving the perfect balance of shade from taller trees, fresh rainfall from the Khareef monsoon, and nutrients drawn from our fertile soil. This careful attention ensures the plant grows strong and resilient, preparing it for the months ahead.

It is in this quiet stage — long before the cherries ripen to their deep red color — that the foundation for the flavor, aroma, and quality of our coffee is set. Every future cup of Hairiti Coffee begins here, with these tiny green beginnings, shaped by the land and guided by our hands.

The Coffee Cherry – Early Stage

This is a green coffee cherry, hanging firmly on the branch of our coffee trees here in Salalah, Oman. At this stage, the cherries are still maturing, slowly building their size, density, and inner character. They draw strength from the mineral-rich soil — shaped by ancient volcanic activity — and from the seasonal rains that bring life to our farm. Within each cherry lies a pair of seeds, the very beans that, once harvested and roasted, will become the coffee you enjoy in every cup.

Patience is essential in this part of the journey. The cherries remain green for several weeks, quietly transforming as they absorb sunlight and nutrients. Bit by bit, they begin to develop the complex flavors and aromas that make Hairiti Coffee unique. In time, these green cherries will undergo a remarkable change, turning a deep, vibrant red — the natural signal that they are ripe, full of character, and ready for harvest.

Each stage is a reminder that great coffee is not rushed. It is cultivated with care, respect for the land, and time, allowing nature to do its work and create the perfect bean.

Coffee Blossoms and Growing Cherries

Among the vibrant green cherries, the coffee tree graces us with its delicate white blossoms — a fleeting but extraordinary sight. These flowers, soft and fragrant, signal the beginning of the coffee cycle. Each blossom is more than just a moment of beauty; it is the promise of transformation, as in time these blooms will give way to cherries that mature into the beans we know and love.

In Salalah’s unique climate, where the Khareef monsoon brings life-giving rains and the soil is rich with natural minerals, these blossoms thrive. They fill the air with a subtle, sweet fragrance that tells us the cycle of growth is unfolding as it should. Within days, the blossoms fall away, leaving behind the earliest signs of fruit, tiny green cherries that will continue to grow under the sun.

For us at Hairiti Coffee, this stage represents balance and patience — nature’s rhythm at its finest. Each flower and each emerging cherry is a symbol of the harvests to come, carrying within it the story of our land and the care we give to every tree. It is here, in these blossoms, that the journey of every cup truly begins.

Crafting Coffee with Purpose

Hairiti Farm is the largest coffee farm in the Sultanate of Oman. Today, it includes more than 5,000 planted seedlings, under an ambitious strategic plan aiming to reach 50,000 seedlings by 2030. The farm aspires to become a cornerstone in supporting food security and in exporting Omani coffee to global markets.
